It's nearly March but we still have a few more weeks of cold weather ahead of us. Luckily, that means more time for warm, soul-satisfying puddings!
I definitely recommend giving this recipe a try if you're suffering from the winter blues. It's a great after-dinner dessert - but equally suitable for breakfast. (Not to mention crazy nutritious).
- 1 c. coconut milk
- 1/2 c. pumpkin puree
- 1/2 c. water
- 1/4 c. chia seeds
- 1/4 c. agave syrup (or maple syrup, or honey)
- 1 tsp salt
- 2 tsp vanilla
- 2 tsp cinnamon
- Pinch nutmeg
- Pumpkin seeds to garnish (optional)
- In a small saucepan add coconut milk, pumpkin, water, agave syrup, salt, spices, and vanilla and bring to a boil.
- Reduce heat to low and add chia seeds.
- Whisk gently until pudding thickens (about 3 minutes).
- Allow to cool slightly before serving. Garnish with pumpkin seeds. Makes 4 servings.
